INGREDIENTS
1 cup 250 ml Fresh Attitude prewashed San Marino mix salad
1 c. 250 ml Fresh Attitude prewashed spinach salad
5 Jumbo Shrimp, Peeled and deveined
1/4 c. 63 ml Halved cherry tomatoes
1/2 c. 125 ml Mango, diced
1/2 Avocado, large
Juice of 1/2 lime
Cajun Seasoning:
3 tbsp. 45 ml Paprika
2 tbsp. 30 ml Kosher salt
1 tbsp. 15 ml each : Garlic powder ; Ground black pepper;
Onion powder and Dried oregano
1/2 tbsp. 7 ml each : Cayenne & Thyme
Cilantro Lime Dressing:
1 cup 250 ml Fresh cilantro leaves
3 tbsp. 45 ml Honey
3 cloves Garlic, minced
1/2 c. 125 ml Olive oil
Juice of 1/2 lime
Sea salt and pepper, to taste
METHOD
1. In a bowl, mix together spices to make the cajun seasoning.
2. Heat the olive oil at medium heat in a pan. Add the shrimp and cook for about 2-3 minutes, turning them halfway.
3. While the shrimp is cooking, combine the ingredients for the cilantro lime dressing in a blender.
4. Combine the Fresh Attitude San Marino mix and baby spinach, tomatoes, avocado, and mango in a serving bowl. Top with dressing and toss until well mixed. Top with cooked shrimp, lime juice and enjoy!
