INGREDIENTS

Recipe for 4 to 6 servings

Salad:

  • 5 oz of Fresh Attitude baby spinach

Roasted mango:

  • 2 peeled and diced mangos
  • 1 lime (zest + juice)
  • 5 ml of butter
  • 5 ml of brown sugar

Dressing:

  • 125 ml of Canola oil
  • 10 ml of roasted sesame seed oil
  • 45 ml of rice vinegar
  • 5 ml of honey
  • 15 ml of finely chopped fresh ginger
  • 5 ml of toasted sesame seeds
  • Salt and pepper

METHOD

Heat butter in a pan, add the diced mango. Add the lime zest and brown sugar. Cook 5 minutes on each side, then drizzle with lime juice. Reserve.

For the dressing:
In a bowl, mix all the dressing ingredients together. Then pour on a bed of spinach with the roasted mango.
