INGREDIENTS
Recipe for 4 to 6 servings
Salad:
- 5 oz of Fresh Attitude baby spinach
Roasted mango:
- 2 peeled and diced mangos
- 1 lime (zest + juice)
- 5 ml of butter
- 5 ml of brown sugar
Dressing:
- 125 ml of Canola oil
- 10 ml of roasted sesame seed oil
- 45 ml of rice vinegar
- 5 ml of honey
- 15 ml of finely chopped fresh ginger
- 5 ml of toasted sesame seeds
- Salt and pepper
METHOD
Heat butter in a pan, add the diced mango. Add the lime zest and brown sugar. Cook 5 minutes on each side, then drizzle with lime juice. Reserve.
For the dressing:
In a bowl, mix all the dressing ingredients together. Then pour on a bed of spinach with the roasted mango.
