INGREDIENTS

Ingredient for 4 to 6 servings

  • 4 cups carrots, peeled and cut diagonally
  • 2 tablespoons butter or olive oil
  • 3/4 cup of chicken or vegetable broth
  • 1 onion, or 5 shallots thinly sliced
  • 2 tablespoons Maple syrup
  • Salt, pepper
  • Chopped parsley and/or chive

METHOD

1. Sweat the onions in butter or olive oil. Add salt and pepper.
2.  Add carrots and maple syrup. Add the broth. Cover and cook for 7 to 8 minutes until tender
3.  Before serving, add parsley and season to taste.
