INGREDIENTS

4 cups carrots, peeled and cut diagonally

3/4 cup of chicken or vegetable broth

2 tablespoons butter or olive oil

1 onion, or 5 shallots thinly sliced

2 2 tablespoons Maple syrup

Salt, pepper

Chopped parsley and/or chive

INSTRUCTIONS

  1. Sweat the onions in butter or olive oil. Add salt and pepper.
  2. Add carrots and maple syrup. Add the broth.
  3. Cover and cook for 7 to 8 minutes until tender
  4. Before serving, add parsley and season to taste.
