INGREDIENTS
8 slices sandwich bread
8 thin slices bacon
2 ripe tomatoes
1 ripe avocado
Mayonnaise
2 oz. Fresh Attitude pre-washed spring mix
½ cucumber
A small bunch of fresh herbs (chives, parsley)
Salt and pepper to taste
METHOD
1. Lightly toast the bread slices and cook the bacon until crisp.
2. Thinly slice the vegetables and chop the fresh herbs.
3. Spread mayonnaise on each slice of bread. On 4 slices of bread, spread a layer of pre-washed Fresh Attitude Spring Mix. Add 2 slices of bacon, slices of tomato, avocado and cucumber on each. Sprinkle with chopped herbs, salt and pepper.
4. Close sandwiches with remaining bread slices. Cut each sandwich into two triangles.
TIPS
You can add thin slices of cheese or crunchy vegetables like radishes for an even tastier club sandwich.
