1. Thoroughly wash the greens. Dry and chop finely.
2. In a small bowl, combine the balsamic vinegar and lemon juice. Gradually wisk in the olive oil net and emulsify with a whisk.
3. Arrange all the salad ingredients in four bowls and sprinkle with the dressing.
4. Add salt and pepper.
5. Sprinkle with pumpkin seeds if desired.
Vary the recipe by adding watermelon.
