INGREDIENTS
1 container (142 g – 5oz) of Fresh Attitude San Marino mix
1 cup (250 ml) quinoa, rinsed and drained
2 tbsp (30 ml) olive oil
1 1/4 cups (310 ml) chicken broth
1/4 cup (60 ml) green onion, chopped
2 tbsp (30 ml) fresh basil, finely chopped
METHOD
1. In a saucepan, heat oil over high heat. Add quinoa and sauté for 1 minute. Add broth, stir and bring to a boil. Reduce heat to minimum, cover and cook for 15 minutes. Remove from heat and let stand for 10 minutes, covered. Using a fork, break quinoa into grains. Add green onion, basil, baking powder, tuna and cheese. Mix well, then set aside in the fridge.
2. If transporting in a lunch box, bring the tuna quinoa, half the San Marino Mix, the other ingredients and the dressing separately. Assemble salad at lunchtime.
